Perfectly poached chicken

2-3 chicken breasts, fat trimmed

1.5-2 Liters of chicken or vegetable stock // or water

Any herbs you would like to add flavour 


Place the chicken breasts in the bottom of a pot.

Completely cover the chicken with chicken broth or water (at least 500mL per breast)

Add any herbs you would like

Bring to the boil, then quickly reduce the heat to low so that the water is simmering.

Partly cover and gently simmer for 10 minutes. Turn off heat completely, and allow the chicken to remain in hot water for 15 minutes

Make sure the chicken is cooked through, neatly slice. Serve with rice and vegetables for dinner, or add to your favorite salad or sandwich!
