Matriciana pasta sauce

  1. 500ml tomato passta (tomato puree in a glass jar)
  2. I-2 cloves garlic crushed and finely chopped
  3. 1 small onion diced
  4. 2 tablespoons extra virgin olive oil
  5. ¼ - ½ a cup water
  6. 200g quality leg ham from a deli, diced
  7. 100g or about 6-8 button mushrooms, thinly sliced
  8. handful of spinach
  9. 6-8 cherry tomatoes
  10. 1 small diced fresh chilli – optional
  11. 2 pinches of salt
  12. pepper to taste 


  • Place diced onion, crushed garlic and olive oil in a pan, and over medium-high heat, cook together for 1-2 minutes.
  • Add the chopped ham, mushrooms and tomatoes and sauté all together for another 1-2 minutes
  • Add the tomato passta sauce, water, salt, pepper and chilli and stir everything together. Simmer on low heat for about 10-15 minutes (if it dries up add some more water)
  • Add a handful of spinach in, and stir through until it wilts.
  • Serve with your favourite type of pasta, over some steamed vegetables or over zucchini and carrot pasta strips
