Healthy Zucchini Fritters

-Makes 12 fritters-

2 large zucchinis or 3 small, grated (400g)

2-3 stalks spring onion, finely diced

30g (3 tablespoons) Freshly Grated Parmesan Cheese

2 eggs, beaten

¼ cup Whole Wheat Flour

Salt and Pepper to taste

2-3 tablespoons very finely chopped parsley

Pinch of chilli Flakes (optional)


-Give the grated zucchinis a squeeze over a the sink or a bowl to remove excess water from the zucchinis.

-Then combine the grated zucchinis with the diced spring onion, parmesan cheese, eggs, flour, salt and pepper, chopped parsley and chili flakes.

-Heat a dash of extra virgin olive oil in a frying pan

-Make a fritter out of about 2 tablespoons of the mixture, and add it to the pan, flattening it out to the fritter thickness you would like

-Cook about 4 fritters at a time for 2 – 3 minutes on each side, until they are golden brown. That easy!

-Try to keep them all warm while you cook the remaining fritters.

Serve 2-4 fritters with a side salad and some tzatziki, natural yoghurt, avocado and lemon or sour cream.
