Easy Chop Salad – Many Ways

You can be creative and use any raw or cooked vegetables you like. Try to go for lots of colour and to use about 5 different veg. I used:

  • Quarter of a red onion, chopped
  • A tomato, chopped
  • Half a capsicum, chopped
  • Half a cucumber, chopped
  • A quarter can of chopped beetroot


You can also use any protein source you like! I used:

  • 150g Chicken breast, cut into tenderloins and grilled until cooked through.

You could use: tuna, fish, seafood or lean red meat

Vegetarian: use 150-200g of cooked or canned: chickpeas, brown rice, lentils, or red/white/black beans


You can use any healthy fat you like: I used

  • 30g ricotta cheese

You could use; avocado, fetta cheese, an egg, tahini, chopped nuts, table spoon of olive oil drizzled over the top 


Place the chopped vegetables in sections like pictured, or all mixed up into a bowl. Then add the protein or carb source on top. Serve with your choice of a healthy fat on the side, or mixed through
