Cauliflower Rice

  • Complexity: easy


  • 1 head of cauliflower
  • 1 small onion diced finely
  • 1-2 cloves garlic diced finely
  • extra virgin olive oil
  • salt & pepper

Additional flavourings:

  • Diced spring onion
  • Parsley
  • Herbs/spices (chives, chilli, coriander etc)


  1. Cut the cauliflower head up into smaller florets. Using a food processor, process the cauliflower until it is very finely chopped. OR if you do not have a food processor, you can hand grate the cauliflower.
  2. Spray/line a large fry pan with the olive oil and fry the diced onion and garlic for a minute or so
  3. Then add the cauliflower into the pan and cook on medium/high heat, stirring continuously
  4. Keep cooking/frying for about 15 minutes, or until the cauliflower is tender and light golden in colour
  5. Stir in any additional ingredients and season with salt and pepper
