Baked salmon & greens (in 20 minutes!)

  • 1 x 150-180g fillet of fresh salmon
  • 3-4 small florets of broccoli
  • 3 asparagus spears, trimmed (or green beans)
  • 1 Teaspoon of exrta virgin olive oil (optional)
  • Diced lemon
  • Salt and pepper
  • Baking paper for cooking

  • Pre-heat the oven to 200deg Celsius
  • Lay out enough baking paper to place the salmon and veggies on, and make sure it is enough to fold over to cover the top and seal together (see picture below)
  • Place salmon fillet down and place the broccoli and asparagus on top and surrounding the salmon fillet
  • Drizzle the olive oil over the top
  • Squeeze a fresh lemon dice over it all
  • Crack some pepper and salt over the top
  • Then fold the baking paper over the top of the salmon and veggies, folding all the corners of the paper together to form a well sealed parcel (see picture below)
  • Place on a baking tray, and put into the oven for 20-25 minutes
  • Take the tray from oven, open the parcel and serve onto a plate
