Egg and Veg scramble with smoked salmon

  • 1 whole egg and 1-2 egg whites (organic free range)
  • 50g spinach
  • 3 mushrooms
  • 1 zucchini
  • 1/6th onion
  • 50g smoked salmon
  • 25g avocado


Chop mushrooms and onion, grate the zucchini.

In a fry pan add a few drops of olive oil and a tablespoon of water and cook the mushrooms, onion, zucchini and half of the spinach for 2 min, until browned.

Then add in eggs. Scramble together until cooked.

Serve with smoked salmon, fresh spinach and avocado
