Raw Lemon Cheesecake Balls

Ingredients

  • Finely grated lemon rind of 1 large lemon
  • Juice of half large lemon
  • 1 cup cashews
  • 1 cup desiccated coconut
  • 2 heaped tablespoon honey (or natural maple syrup)
  • half cup almond meal

Directions

Blend all ingredients in a food processor
 
Roll into Balls and roll in some desiccated coconut as garnish
Refrigerate for 30+ minutes
