Quinoa & chicken salad
Ingredients
2/3 cup Cooked Quinoa
100g Poached chicken
Handfull of: green beans, chopped carrot, peas
Spinach
1tbs extra virgin olive oil
30g Goats curd or fetta
Chopped fresh chilli (optional)
Directions
I try to have staples like cooked quinoa and poached chicken in the fridge ready to go. I cook them in big batches and keep them in containers.
Boil the beans, carrots and peas for 3-5 minutes Poach or grill the chicken and pull it apart (shred) In a bowl toss the steamed veggies with the cooked quinoa, cooked chicken, spinach and a tablespoon of extra virgin olive oil.
Top with freshly chopped chilli and the goats curd/cheese. Salt and pepper to taste.
