Healthy Burgers Patties
Ingredients
450g ground turkey mince - you can use other meat like lean beef mince or kangaroo mince
1 cup cooked quinoa or brown rice
½ cup grated zucchini
½ cup grated carrot
¼ cup finely diced red capsicum
¼ cup finely diced onion
¼ cup finely diced spring onion
2 tbs finely chopped parsley
2 tbs finely chopped coriander
1 tsp fresh thyme
2-3 tbs soy sauce
1 tsp salt and pepper
Extra virgin olive oil to cook
Directions
Thoroughly mix the turkey/meat mince, quinoa/rice, zucchini, carrot , capsicum, spring onion, onion, all herbs and soy sauce in a large bowl with your hands. Add some salt and pepper in to your liking. Divide mixture and press into about 8-10 equal burger patties
Heat a large frying pan on medium-high. Add in some extra virgin olive oil (about 3 tbs, or enough to stop the burgers sticking) and cook the patties on 1 side for about 5-6 minutes. Turn and cook for another 5-6 minutes. Keep cooking them until they are cooked through, flipping each minute or so.
Serve alone with a side salad, or on wholegrain buns/bread with some tomato, spinach, red onion, beetroot, avocado, cheese or your favourite toppings
