Tuna Nicoise Salad

Ingredients

150g fresh tuna steak/fillet // or a can of tuna in brine or olive oil if low on time

2 hard boiled eggs

One small-medium potato

Handful green beans

Handful spinach

Tomato or capsicum

Kalamata olives about 5

1-2 tablespoons of olive oil

1 tablespoon red wine vinegar 

Directions

  • Get the eggs boiling in a small saucepan with boiling water, cook over medium heat for 6-7 minutes
  • In another saucepan place the beans and potato in boiling water, take the beans out after 3 minutes, and the potato after about 10 (when softened)
  • While the above are boiling pre heat a fry pan with a little olive oil and place the tuna steak in to start frying it – season it with some salt and pepper while in the pan. Cook for about 2-3 minutes each side or until cooked to your liking. Once cooked place aside for 2 minutes and flake it into bite size pieces if you wish
  • Cut up the spinach and tomatoes/capsicum and make a bed of salad on a plate with the olives
  • Add the green beans on top when they are done
  • Once the eggs are cooked and peeled and the potatoes are cooked, cut them up as you wish. I went for long, potato chip style
  • Place the eggs, potatoes and tuna on top of your salad
  • Dress the salad with a little olive oil and red wine vinegar, season with salt and pepper
