Carrot Cake Oatmeal

Ingredients

  • 40g or half a cup of oats – I use macro organic quick oats
  • 1 cup almond milk – I use unsweetened vanilla by Almond Breeze
  • 1 cup water
  • 1 level teaspoon physlium husk
  • 1 small carrot, grated 
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • pinch of nutmeg
  • 1 tablespoon crumbled walnuts 
  • 1 teaspoon almond meal (optional)
  • 1 teaspoon coconut oil (optional)
  • 1 teaspoon stevia (or sweetner of choice), enough for desired sweetness 

Directions

  1. Grate carrot
  2. Bring oats, water, milk, physlium husk and almond meal to the boil, and reduce heat to medium.
  3. Add grated carrot, stir
  4. Once it has thinkened, add vanilla extract, cinnamon, nutmeg and stir. 
  5. Then add your sweetner and coconut oil and stir thorough
  6. When you're pleased with the consistency of the oatmeal, bowl it up and stir through the crumbled walnuts and a splash of almond milk
